Ingrédients
- 2 large sweet potatoes
- 2 medium avocados
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon lemon juice
- 1/4 cup cherry tomatoes, halved
- 1 tablespoon fresh cilantro, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Clean and slice the sweet potatoes into 1/4-inch thick slices.
- Brush both sides of the sweet potato slices with olive oil and place them on a baking sheet.
- Bake in the preheated oven for 20-25 minutes, flipping halfway through until tender and slightly crispy.
- While the sweet potatoes are baking, cut and scoop out the avocados into a bowl.
- Mash the avocados with a fork until smooth. Stir in salt, black pepper, red pepper flakes, and lemon juice.
- Once the sweet potato slices are done, let them cool slightly before spreading the avocado mash on top.
- Garnish with cherry tomatoes and fresh cilantro before serving.
