- 1/2 cup coconut milk
- 1 cup shredded coconut
- 1/4 cup lime juice

Instructions
- Preheat the oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large bowl, cream together the butter, granulated sugar, and lime zest until light and fluffy.
- Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the coconut milk, starting and ending with the dry ingredients.
- Fold in the shredded coconut until just combined.
- Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Once the cake is cool, mix the lime juice and powdered sugar together to make a glaze. Drizzle over the cooled cake.
