- 2 large eggs

- 1 tablespoon lemon juice
- 2 tablespoons maple syrup
- 1/4 cup water
Instructions
- In a blender, combine the rolled oats, eggs, milk, honey, and vanilla extract. Blend until smooth and let it rest for 5 minutes.
- Heat a non-stick skillet over medium heat and lightly grease with butter.
- Pour a small ladle of batter into the pan, swirling to cover the bottom. Cook for about 2 minutes or until bubbles form on the surface. Flip and cook for another minute. Repeat with the remaining batter.
