Bulgur and Parsley Salad - Vegan

Ingrédients
- 1 cup bulgur
- 1 and and 1/2 cups boiling water
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups fresh parsley, finely chopped
- 1/4 cup fresh mint, finely chopped
- 1/2 cup green onions, finely chopped
- 1 cup cherry tomatoes, halved
- 1/2 large cucumber, diced
- 1/4 cup pomegranate seeds (optional)
Instructions
- Place the bulgur in a large bowl, add the boiling water, and cover. Let it soak for about 20 minutes or until tender and the water is absorbed.
- In a separate small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
- Fluff the bulgur with a fork and let it cool to room temperature.
- Once the bulgur is cooled, add the parsley, mint, green onions, cherry tomatoes, and cucumber.
- Pour the dressing over the salad and toss everything together until well combined.
- If using, sprinkle the pomegranate seeds on top before serving.
- Serve the salad chilled or at room temperature.
