Ingrédients
- 1 pound ground beef
- 1/2 pound ground pork
- 1 cup almond flour
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- 1/4 cup unsweetened ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 10 slices bacon
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the ground beef, ground pork, almond flour, chopped onion, minced garlic, eggs, unsweetened ketchup, Worcestershire sauce, salt, pepper, dried thyme, and dried oregano. Mix until everything is well incorporated.
- Line a loaf pan with bacon slices, ensuring the strips line the bottom of the pan and hang over the sides.
- Press the meat mixture into the loaf pan, on top of the bacon slices.
- Fold the overhanging bacon slices over the top of the meatloaf mixture.
- Place the loaf pan on a baking sheet to catch any drippings and bake in the preheated oven for 60-70 minutes, or until the bacon is crispy and the internal temperature of the meatloaf reaches 160°F (71°C).
- Let the meatloaf rest for 10 minutes before slicing and serving.
