Ingrédients
- 2 cups cooked black beans
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 large egg
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
- 2 tablespoons tomato paste
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.
- Add the bread crumbs, grated Parmesan cheese, chopped onion, minced garlic, egg, olive oil, dried oregano, smoked paprika, ground cumin, salt, black pepper, chopped parsley, and tomato paste to the mashed beans. Mix until well combined.
- Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until the meatballs are firm and golden brown, turning halfway through to ensure even cooking.
- Serve warm, with your favorite pasta, in a sub sandwich, or on their own with a dipping sauce.
