Mango and Coconut Chia Pudding - Vegan

Ingrédients
- 1 cup coconut milk
- 1/2 cup chia seeds
- 1 cup mango puree
- 1 tablespoon honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup diced fresh mango
- 1/4 cup shredded coconut
- 1/4 cup coconut flakes
- 1/4 teaspoon salt
Instructions
- In a mixing bowl, combine the coconut milk, chia seeds, honey or maple syrup, vanilla extract, and salt. Stir well until all ingredients are fully incorporated.
- Cover the bowl and refrigerate for at least 4 hours or overnight, allowing the chia seeds to absorb the liquid and form a pudding-like consistency.
- Once the chia pudding has set, layer it with mango puree in serving glasses. Begin with a layer of chia pudding, followed by a layer of mango puree, and repeat until the glass is filled.
- Top the pudding with diced fresh mango, shredded coconut, and coconut flakes.
- Serve immediately or keep refrigerated until ready to eat.
