- 2 tablespoons olive oil
- 1 large onion, diced

- 2 celery stalks, diced
- 1 zucchini, diced

- 1 cup green beans, trimmed and cut into 1-inch pieces
- 6 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup farro
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 cup kale, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons tomato paste
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add the onion and cook until translucent, about 5 minutes.
- Stir in the garlic, carrots, and celery, cooking for another 5 minutes until vegetables begin to soften.
- Add the zucchini, bell pepper, and green beans. Cook for 3 minutes, stirring occasionally.
- Pour in the vegetable broth and diced tomatoes, then add farro. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the cannellini beans, kale, oregano, basil, thyme, salt, pepper, and tomato paste. Stir well and let simmer for an additional 15 minutes until all vegetables and farro are tender.
- Adjust seasoning if needed and stir in fresh parsley before serving.
