Pineapple Coconut Salsa - Vegan

Ingrédients
- 2 cups fresh pineapple, diced
- 1/2 cup shredded coconut
- 1 medium red bell pepper, diced
- 1 medium red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 medium lime, juiced
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 medium jalapeño, seeded and finely chopped
Instructions
- In a large bowl, combine the diced pineapple, shredded coconut, red bell pepper, red onion, cilantro, and jalapeño.
- In a small bowl, whisk together the lime juice, honey, salt, and black pepper.
- Pour the lime juice mixture over the pineapple mixture and toss to coat evenly.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld together.
