Raspberry Coconut Chia Popsicles - Vegan
Indulge in the perfect summer delight with our Tropical Raspberry Coconut Chia Pops. These vibrant popsicles combine fresh raspberries with creamy coconut milk and nutrient-rich chia seeds, offering a refreshing and healthy treat that's dairy-free and vegan.
Ingrédients
- 1 cup fresh raspberries
- 1/2 cup chia seeds
- 2 cups coconut milk
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1/4 cup shredded coconut
Instructions
- In a bowl, combine the coconut milk, honey, and vanilla extract. Stir until well mixed.
- Add the chia seeds to the coconut milk mixture and stir to combine. Let the mixture sit for about 5 minutes, then stir again to prevent the chia seeds from clumping.
- Carefully fold in the fresh raspberries and shredded coconut into the chia seed mixture.
- Pour the mixture into popsicle molds and insert sticks. Freeze for at least 4 hours, or until solid.
- To release the popsicles from the molds, run warm water over the outside of the molds for a few seconds, then gently pull the popsicles out.
