In a bowl, combine the coconut milk, honey, and vanilla extract. Stir until well mixed.
Add the chia seeds to the coconut milk mixture and stir to combine. Let the mixture sit for about 5 minutes, then stir again to prevent the chia seeds from clumping.
Carefully fold in the fresh raspberries and shredded coconut into the chia seed mixture.
Pour the mixture into popsicle molds and insert sticks. Freeze for at least 4 hours, or until solid. To release the popsicles from the molds, run warm water over the outside of the molds for a few seconds, then gently pull the popsicles out.
