Ingrédients
- 2 cups heavy cream
- 1 cup whole milk
- 4 large egg yolks
- 3/4 cup granulated sugar
- 2 tablespoons loose Earl Grey tea
- 1 tablespoon dried culinary lavender
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a medium saucepan, combine the heavy cream, whole milk, Earl Grey tea, and dried lavender. Heat over medium heat until it begins to steam, but do not boil.
- Remove from heat and let steep for 10 minutes. Strain the mixture through a fine-mesh sieve to remove the tea leaves and lavender.
- In a separate bowl, whisk the egg yolks and sugar until they become pale and thickened.
- Gradually whisk the warm cream mixture into the egg yolk mixture, then return the mixture to the saucepan.
- Cook over medium-low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 10 minutes). Do not let it boil.
- Remove from heat and stir in the vanilla extract and salt.
- Allow the mixture to cool at room temperature, then refrigerate until completely chilled (at least 4 hours or overnight).
- Once chilled, churn the mixture in an ice cream maker according to the manufacturer’s instructions.
- Transfer the ice cream to an airtight container and freeze for at least 2 hours before serving.
