Ingrédients
- 1 cup all-purpose flour
- 1/4 cup cornmeal
- 1 tablespoon granulated sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup ice water
- 2 cups fresh blackberries
- 2 tablespoons fresh sage, finely chopped
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 tablespoon milk, for brushing
- 1 tablespoon turbinado sugar, for sprinkling
Instructions
- In a large bowl, whisk together the flour, cornmeal, granulated sugar, and salt.
- Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Gradually add the ice water, stirring with a fork until the dough just comes together.
- Turn the dough onto a lightly floured surface and shape it into a disk. Wrap in plastic wrap and chill for at least 30 minutes.
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the blackberries, sage, granulated sugar, lemon juice, and cornstarch. Gently toss to combine.
- On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer to the prepared baking sheet.
- Arrange the blackberry mixture in the center of the dough, leaving a 2-inch border around the edges.
- Fold the edges of the dough over the filling, pleating as you go.
- Brush the edges of the dough with milk and sprinkle with turbinado sugar.
- Bake for 40-45 minutes, or until the crust is golden and the filling is bubbly.
- Allow the galette to cool slightly before slicing and serving.
