Ingrédients
- 1 cup heavy cream
- 1 cup whole milk
- 5 large egg yolks
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cardamom
- 1/2 cup dried apricots, finely chopped
- 2 tablespoons turbinado sugar
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium saucepan, heat the heavy cream and milk over medium heat until just about to simmer. Remove from heat.
- In a mixing bowl, whisk together the egg yolks, granulated sugar, and vanilla extract until smooth and pale.
- Slowly pour the warm cream mixture into the egg yolk mixture, whisking constantly to prevent curdling.
- Stir in the ground cardamom and finely chopped dried apricots.
- Strain the mixture through a fine sieve into a large measuring cup or a bowl with a spout to remove any lumps or cooked egg pieces.
- Divide the mixture evenly among 4 ramekins.
- Place the ramekins in a baking dish and pour hot water into the dish until it reaches halfway up the sides of the ramekins.
- Bake for 40-45 minutes, or until the custards are set but still slightly jiggly in the center.
- Remove the ramekins from the water bath and let them cool to room temperature, then refrigerate for at least 2 hours or until completely chilled.
- Before serving, sprinkle 1/2 tablespoon of turbinado sugar evenly over the surface of each custard.
- Using a kitchen torch, caramelize the sugar until it forms a golden and crispy layer. Alternatively, you can place the ramekins under a broiler, watching closely to prevent burning.
- Let the sugar topping cool for a minute to harden before serving.
