Garlic and Herb Mashed Cauliflower - Low Calorie

Ingrédients
- 1 large head of cauliflower, chopped
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh chives, chopped
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 cup unsweetened almond milk
Instructions
- Bring a large pot of water to a boil and cook the cauliflower for 10-12 minutes, or until tender. Drain and set aside.
- In a small skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 2 minutes. Remove from heat.
- In a food processor, combine the cooked cauliflower, sautéed garlic, parsley, chives, sea salt, and black pepper.
- Add the almond milk gradually and process until the mixture is smooth and creamy.
- Adjust seasoning to taste and serve warm.
