Ingrédients
- 2 pounds pounds baby potatoes, halved
- 3 tablespoons olive oil
- 1 lemon, lemon, zested and juiced
- 3 garlic garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, dried oregano, dried thyme, salt, and black pepper.
- Add the halved baby potatoes to the bowl and toss to coat them evenly with the marinade.
