Mango Lime Chutney - Vegan
The Zesty Mango Lime Chutney is an irresistible mix of sweet, tangy, and spicy flavors, making it a delightful addition to any meal. Combining ripe mangoes with the zing of fresh lime juice and a hint of spices, this chutney can elevate everything from curries to sandwiches.
Ingrédients
- 4 cups mango, diced
- 1/2 cup lime juice
- 1/2 cup brown sugar
- 1 medium onion, finely chopped
- 1 clove garlic, minced
- 1 teaspoon ginger, grated
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/4 teaspoon red chili flakes
- 1/2 teaspoon salt
- 2 tablespoons apple cider vinegar
- 1/4 cup raisins
- 1/4 cup water
Instructions
- In a large saucepan, combine the diced mango, lime juice, brown sugar, and apple cider vinegar.
- Add the finely chopped onion, minced garlic, and grated ginger to the saucepan.
- Stir in the cumin seeds, mustard seeds, red chili flakes, and salt.
- Add the raisins and water, then bring the mixture to a boil over medium-high heat.
- Reduce the heat to low and simmer the chutney, stirring occasionally, for about 35-40 minutes or until thickened.
- Remove from heat and let cool to room temperature before serving.
- Store the chutney in an airtight container in the refrigerator for up to 2 weeks.
