Ingrédients
- 1 cup bulgur wheat
- 1 and and 1/2 cups boiling water
- 1 and and 1/2 cups fresh parsley, finely chopped
- 1/2 cup fresh mint, finely chopped
- 1/4 cup green onions, finely chopped
- 2 cups tomatoes, finely diced
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Place the bulgur in a large bowl. Pour the boiling water over it and cover. Let it sit for about 20 minutes or until all the water is absorbed.
- Fluff the bulgur with a fork to separate the grains.
- Add the parsley, mint, green onions, and tomatoes to the bulgur. Gently mix to combine.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the bulgur mixture and toss to coat evenly.
- Allow the tabbouleh to sit for at least 30 minutes to let the flavors meld together.
- Serve chilled or at room temperature as a refreshing and healthy side dish or salad.
