Instructions

  • Roast the vegetables in the preheated oven for 20-25 minutes, stirring halfway through, until tender and slightly caramelized.
  • In a large bowl, combine the cooked farro, roasted vegetables, cherry tomatoes, and crumbled feta cheese.
  • In a small bowl, whisk together the remaining 1 tablespoon of olive oil, balsamic vinegar, lemon juice, and chopped parsley.
