  • 2 tablespoons Dijon mustard
  • 1/2 cup breadcrumbs
  • 2 cloves garlic, minced

  • 1 tablespoon rosemary, finely chopped

  • Black pepper, pepper, to taste
  • 1 medium eggplant, diced
  • 2 medium zucchinis, diced
  • 1 medium red bell pepper, diced
  • 1 medium yellow bell pepper, diced
  • 1 medium red onion, diced
  • 3 cloves garlic, minced
  • 2 cups canned diced tomatoes
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh oregano, chopped

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Season the lamb noisettes with salt and black pepper.
  • Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the lamb noisettes for 2 minutes on each side until browned. Remove from heat.
  • Brush the lamb noisettes with Dijon mustard. In a small bowl, combine breadcrumbs, garlic, parsley, thyme, and rosemary. Press the herb mixture onto the mustard-coated lamb.
  • Place the lamb noisettes on a baking tray and bake for 10-12 minutes until cooked to your liking.
  • In a large pan, heat the remaining olive oil over medium heat. Add the eggplant, zucchinis, bell peppers, and red onion. Cook for 10 minutes until vegetables are tender.
  • Add the minced garlic and diced tomatoes to the pan. Simmer for 15 minutes.
  • Stir in the basil and oregano. Season with salt and black pepper to taste.
