Lamb Noisettes with Herb Crust and Ratatouille - High Protein

Ingrédients
- 4 lamb lamb noisettes
- 2 tablespoons olive oil
- 2 tablespoons Dijon mustard
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 1/4 cup parsley, finely chopped
- 1 tablespoon thyme, finely chopped
- 1 tablespoon rosemary, finely chopped
- Salt, to to taste
- Black pepper, pepper, to taste
- 1 medium eggplant, diced
- 2 medium zucchinis, diced
- 1 medium red bell pepper, diced
- 1 medium yellow bell pepper, diced
- 1 medium red onion, diced
- 3 cloves garlic, minced
- 2 cups canned diced tomatoes
- 1 tablespoon fresh basil, chopped
- 1 tablespoon fresh oregano, chopped
Instructions
- Preheat oven to 400°F (200°C).
- Season the lamb noisettes with salt and black pepper.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the lamb noisettes for 2 minutes on each side until browned. Remove from heat.
- Brush the lamb noisettes with Dijon mustard. In a small bowl, combine breadcrumbs, garlic, parsley, thyme, and rosemary. Press the herb mixture onto the mustard-coated lamb.
- Place the lamb noisettes on a baking tray and bake for 10-12 minutes until cooked to your liking.
- In a large pan, heat the remaining olive oil over medium heat. Add the eggplant, zucchinis, bell peppers, and red onion. Cook for 10 minutes until vegetables are tender.
- Add the minced garlic and diced tomatoes to the pan. Simmer for 15 minutes.
- Stir in the basil and oregano. Season with salt and black pepper to taste.
- Serve the herb-crusted lamb noisettes with a generous portion of ratatouille.
