Ingrédients
- 1 medium cauliflower head, grated into rice-sized pieces
- 3 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 8 nori nori sheets
- 1 large carrot, julienned
- 1 medium cucumber, julienned
- 1 avocado, avocado, sliced
- 1 red red bell pepper, julienned
- 8 ounces ounces smoked salmon, sliced (optional for non-vegetarians)
- Soy sauce sauce for dipping
- Pickled ginger ginger and wasabi for serving
Instructions
- Place the grated cauliflower in a microwave-safe bowl and cover with a damp paper towel.
- Microwave on high for 4-5 minutes until soft, then let it cool to room temperature.
- In a small bowl, mix rice vinegar, sugar, and salt. Add this mixture to the cooked cauliflower rice and stir well.
- Lay a nori sheet on a bamboo sushi mat, shiny side down.
- Spread a thin layer of cauliflower rice over the nori, leaving a 1-inch border at the top.
- Arrange the carrot, cucumber, avocado, and red bell pepper in a line across the center of the cauliflower rice. Add smoked salmon if using.
- Roll the sushi tightly using the bamboo mat, then seal the edge with a bit of water.
- Repeat with the remaining nori sheets and fillings.
- Use a sharp knife to slice the rolls into bite-sized pieces.
- Serve with soy sauce, pickled ginger, and wasabi on the side.
