The Veggie Zoodle Nests with Pesto Drizzle is a delightful dish that brings the freshness and vibrancy of a green garden directly to your plate. Each nest is carefully crafted with spiralized zucchinis and carrots, enhanced with the bright flavors of cherry tomatoes, bell peppers, and red onion, and finished with a generous drizzle of homemade basil pesto.
Ingrédients
- 2 large zucchinis, spiralized
- 1 large carrot, spiralized
- 1/2 cup cherry tomatoes, halved
- 1/4 cup bell peppers, finely chopped
- 1/4 cup red onion, finely chopped
- 2 tablespoons olive oil
- Salt and and pepper to taste
- 1/2 cup fresh basil leaves
- 2 cloves garlic
- 1/4 cup pine nuts
- 1/3 cup parmesan cheese, grated
- 1/4 cup olive oil (for pesto)
- Juice of of 1/2 lemon
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the spiralized zucchinis and carrots.
- Toss the zoodles with the cherry tomatoes, bell peppers, and red onion.
- Drizzle with olive oil and season with salt and pepper to taste.
- On a lined baking sheet, form small nests with the vegetable mixture.
- Bake for 10-12 minutes until the edges are slightly crispy.
- Meanwhile, prepare the pesto by combining basil leaves, garlic, pine nuts, parmesan cheese, 1/4 cup of olive oil, and lemon juice in a food processor.
- Blend until smooth and creamy.
- Remove the veggie nests from the oven and drizzle with the fresh pesto.
- Serve warm and enjoy!
