Ingrédients
- 1 large cauliflower head
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups cooked chicken breast, shredded
- 1/2 cup sugar-free BBQ sauce
- 1/2 medium red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Cut the cauliflower into florets and pulse in a food processor until it reaches a rice-like consistency.
- Place the cauliflower rice in a microwave-safe bowl and microwave on high for 8 minutes. Let it cool slightly and then transfer to a clean kitchen towel. Squeeze out as much moisture as possible.
- In a large bowl, combine the cauliflower, mozzarella cheese, parmesan cheese, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Spread the cauliflower mixture onto the prepared baking sheet and shape it into a pizza crust, about 1/4-inch thick.
- Bake the crust for 20 minutes or until golden brown and crispy.
- In the meantime, mix the shredded chicken with half of the BBQ sauce.
- Remove the crust from the oven and spread the remaining BBQ sauce over it. Top with the BBQ chicken, red onion slices, and shredded cheddar cheese.
- Return the pizza to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and sprinkle with fresh cilantro before serving.
