  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • Cut the cauliflower into florets and pulse in a food processor until it reaches a rice-like consistency.
  • Place the cauliflower rice in a microwave-safe bowl and microwave on high for 8 minutes. Let it cool slightly and then transfer to a clean kitchen towel. Squeeze out as much moisture as possible.
  • In a large bowl, combine the cauliflower, mozzarella cheese, parmesan cheese, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  • Spread the cauliflower mixture onto the prepared baking sheet and shape it into a pizza crust, about 1/4-inch thick.
  • Bake the crust for 20 minutes or until golden brown and crispy.
  • In the meantime, mix the shredded chicken with half of the BBQ sauce.
