Ingrédients
- 1 cup jasmine rice
- 1 1/2 1/2 cups water
- 1 can coconut milk
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon lime zest
- 1 tablespoon lime juice
- 1/2 cup fresh mango, diced
- 1/2 cup fresh pineapple, diced
- 1/4 cup shredded coconut, toasted
- 1 tablespoon mint leaves, chopped
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a medium saucepan, combine the jasmine rice and water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and let simmer for 15 minutes until the water is absorbed.
- Stir in the coconut milk, sugar, and vanilla extract. Continue to cook over low heat, stirring occasionally, for an additional 10-15 minutes until the mixture thickens.
- Remove from heat and stir in the lime zest and lime juice.
- Allow the rice pudding to cool to room temperature, then refrigerate for at least 2 hours to chill.
- To assemble the parfaits, layer the coconut lime rice pudding with diced mango and pineapple in serving glasses.
- Top with toasted shredded coconut and chopped mint leaves just before serving.
