Blackberry and Chia Seed Pudding - Vegan

Ingrédients
- 1 cup fresh blackberries
- 2 tablespoons chia seeds
- 1 cup almond milk
- 1 tablespoon honey
- 1/2 teaspoon vanilla extract
- 1/4 cup granola
- 1/4 cup Greek yogurt
- Mint leaves leaves for garnish
Instructions
- In a bowl, mash half of the blackberries with a fork.
- Add the chia seeds, almond milk, honey, and vanilla extract, and stir well.
- Cover and refrigerate for at least 2 hours or overnight until the mixture thickens.
- Before serving, give the chia pudding a good stir.
- Layer the chia pudding with granola and Greek yogurt in serving bowls.
- Top with the remaining fresh blackberries and garnish with mint leaves.
