Peach Melba Parfait - Vegetarian
The Peach Melba Parfait is a delightful fusion of fresh, juicy peaches and tangy raspberries layered with creamy vanilla Greek yogurt and crunchy granola. This elegant dessert offers a wonderful play of textures and flavors that will captivate your taste buds with each spoonful.
Ingrédients
- 2 large ripe peaches
- 1 tablespoon lemon juice
- 1 tablespoon honey
- 2 cups vanilla Greek yogurt
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
- 1 tablespoon granulated sugar
- 1/2 cup granola
- mint leaves leaves for garnish
Instructions
- Peel, pit, and slice the peaches. Toss them in a bowl with lemon juice and honey. Set aside.
- In another bowl, mix the vanilla Greek yogurt with vanilla extract until well combined.
- In a small saucepan, heat the raspberries with sugar over medium heat, stirring until the raspberries break down and form a sauce. Remove from heat and let cool.
- In large glasses or parfait dishes, layer 1/4 cup of the vanilla yogurt, followed by a few peach slices, a spoonful of raspberry sauce, and a sprinkle of granola.
- Repeat the layers until the glasses are full, ending with a dollop of yogurt and a generous spoonful of raspberry sauce on top.
- Garnish each parfait with a mint leaf and serve immediately.
