Ingrédients
- 1 cup cooked quinoa
- 1 1/2 1/2 cups mashed ripe bananas
- 1/2 cup whole wheat flour
- 1/2 cup rolled oats
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup honey or maple syrup
- 1/4 cup unsweetened applesauce
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the mashed bananas, honey or maple syrup, applesauce, egg, and vanilla extract until well combined.
- Add the cooked quinoa, rolled oats, and whole wheat flour to the wet mixture and stir until just combined.
- Sprinkle in the baking powder, baking soda, ground cinnamon, and salt, then mix gently until fully incorporated.
- Spoon the batter evenly into the muffin cups, filling each about three-quarters full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Enjoy!
