Grilled Lemon Herb Salmon - Gluten Free

Ingrédients
- 4 fillets fillets salmon, 6 oz each
- 2 tablespoons olive oil
- 1 lemon, lemon, juiced and zested
- 2 cloves cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried dill
- 1 cup cherry tomatoes, halved
- 1 medium medium zucchini, sliced
- 1 yellow yellow bell pepper, sliced
Instructions
- In a small bowl, combine olive oil, lemon juice and zest, garlic, salt, pepper, and dill to make the marinade.
- Place the salmon fillets in a dish and pour the marinade over them, ensuring each fillet is evenly coated. Cover and refrigerate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Place the marinated salmon on the grill, skin-side down, and cook for about 5 minutes on each side, or until the salmon flakes easily with a fork.
- In a grill basket, combine cherry tomatoes, zucchini, and bell pepper. Grill alongside the salmon for about 10 minutes, stirring occasionally, until vegetables are tender and slightly charred.
- Serve the grilled salmon with the grilled summer vegetables on the side.
