  • Salt and and pepper to taste
  • Optional toppings: toppings: diced avocado, sour cream, tortilla chips

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened and fragrant, about 3-4 minutes.
  • Stir in the minced jalapeno, ground cumin, smoked paprika, and chili powder. Cook for an additional 2 minutes to toast the spices.
  • Add the black beans, vegetable broth, corn, and diced tomatoes to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Using an immersion blender, blend the soup until it reaches your desired consistency. Alternatively, transfer half of the soup to a blender and puree before returning it to the pot.
  • Stir in the chopped cilantro and lime juice. Season with salt and pepper to taste.
  • Serve hot, topped with diced avocado, sour cream, and tortilla chips if desired.
