Ingrédients
- 4 medium zucchinis, finely chopped
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 1 tablespoon tomato paste
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 tablespoon balsamic vinegar
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the onions and sauté until they begin to turn golden brown, about 7-8 minutes.
- Stir in the garlic and cook for another minute, until fragrant.
- Add the zucchini to the skillet, stirring occasionally, and cook until they become soft and tender, about 15 minutes.
- Mix in the tomato paste, salt, black pepper, and smoked paprika. Cook for another 5 minutes to let the flavors meld together.
- Remove the skillet from heat and stir in the balsamic vinegar, fresh parsley, and dill.
- Let the mixture cool slightly before transferring it to a food processor.
- Pulse until the mixture reaches a smooth, caviar-like consistency.
- Serve warm or chilled with crusty bread or crackers.
