Ingrédients
- 4 cups broccoli florets
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 4 cups vegetable broth
- 1 cup almond milk
- 2 cups sharp cheddar cheese, shredded
- 1/2 teaspoon dried thyme
- 1/4 teaspoon nutmeg
- Salt and and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the broccoli florets to the pot and stir to combine. Cook for another 5 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer until the broccoli is tender, about 10 minutes.
- Stir in the almond milk, shredded cheddar cheese, dried thyme, and nutmeg. Continue to cook, stirring constantly, until the cheese is melted and the soup is heated through. Adjust the seasoning with salt and pepper.
