Classic Gazpacho - Vegan
The Classic Gazpacho is a staple of Andalusian cuisine, delivering a burst of fresh, vibrant flavors that are perfect for hot summer days. This chilled tomato soup combines ripe tomatoes, crisp cucumbers, bell peppers, and onions, all blended to perfection and enhanced with a drizzle of olive oil and vinegar.
Ingrédients
- 6 medium tomatoes, ripe
- 1 large cucumber, peeled and chopped
- 1 medium green bell pepper, seeded and chopped
- 1/2 cup red onion, chopped
- 2 cloves garlic, minced
- 3 cups tomato juice
- 1/4 cup olive oil
- 3 tablespoons red wine vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper (optional)
- 1 medium avocado, diced (for garnish)
- 1/4 cup fresh basil, chopped
Instructions
- In a blender, combine tomatoes, cucumber, bell pepper, red onion, and garlic. Blend until smooth.
- Add tomato juice, olive oil, red wine vinegar, salt, black pepper, cumin, and cayenne pepper if desired. Blend again until well combined.
- Taste and adjust seasoning if needed. Chill the soup in the refrigerator for at least 2 hours before serving.
- Serve chilled, topped with diced avocado and chopped fresh basil.
