Sweet Corn Fritters - Vegetarian
Golden Sweet Corn Fritters bring together the sweetness of fresh corn kernels and the umami of grated Parmesan cheese for a snack that's both delicious and satisfying. Ingrédients
- 2 cups fresh or thawed frozen corn kernels
- 1/2 cup all-purpose flour
- 1/2 cup cornmeal
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 2 larges eggs
- 1/4 cup milk
- 2 tablespoons chopped fresh chives
- 1/4 cup vegetable oil for frying
Instructions
- In a large bowl, combine the flour, cornmeal, grated Parmesan cheese, baking powder, salt, black pepper, and smoked paprika.
- In another bowl, whisk together the eggs and milk until well combined.
- Add the wet ingredients to the dry ingredients, mixing until just combined.
- Stir in the corn kernels and chopped chives.
- Heat vegetable oil in a large skillet over medium-high heat.
- Drop spoonfuls of batter into the skillet, flattening them slightly with the back of the spoon.
- Cook until golden brown, about 2-3 minutes per side.
- Remove from the skillet and drain on paper towels. Serve warm.
