Ingrédients
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs
- 1/2 cup plain Greek yogurt
- 1/2 cup milk
- 1/4 cup olive oil
- 1 cup spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup sun-dried tomatoes, finely chopped
- 1 tablespoon fresh dill, chopped
Instructions
- Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and black pepper.
- In a separate bowl, beat the eggs, Greek yogurt, milk, and olive oil until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the chopped spinach, feta cheese, sun-dried tomatoes, and fresh dill.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
