Roasted Cauliflower with Tahini Sauce - Vegan

Ingrédients
- 1 large cauliflower, chopped into florets
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup tahini
- 1/4 cup water
- 1 lemon, lemon, juiced
- 1 tablespoon maple syrup
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the cauliflower florets with olive oil, cumin, paprika, turmeric, salt, and black pepper until evenly coated.
- Spread the cauliflower on a baking sheet in a single layer.
- Roast in the preheated oven for about 25-30 minutes, or until the cauliflower is golden brown and tender, stirring halfway through.
- While the cauliflower is roasting, prepare the tahini sauce by whisking together the tahini, water, lemon juice, maple syrup, and minced garlic in a bowl until smooth.
- Once the cauliflower is done, remove it from the oven and transfer to a serving platter.
- Drizzle the tahini sauce over the roasted cauliflower and sprinkle with chopped parsley.
