Ingrédients
- 1 large cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup tahini
- 3 tablespoons lemon juice
- 2 tablespoons water
- 1 clove garlic, minced
- 1 tablespoon maple syrup
- 1/4 teaspoon ground cayenne pepper (optional)
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat your oven to 425°F (220°C).
- Place the cauliflower florets in a large bowl and toss with olive oil, cumin, paprika, salt, and black pepper until evenly coated.
- Spread the florets out on a baking sheet in a single layer and roast for 25-30 minutes, stirring halfway through, until they are golden brown and tender.
- While the cauliflower is roasting, prepare the tahini sauce. In a small bowl, whisk together tahini, lemon juice, water, minced garlic, maple syrup, and cayenne pepper until smooth and creamy.
- Once the cauliflower is roasted, transfer to a serving dish and drizzle generously with the tahini sauce.
- Garnish with fresh parsley and serve warm.
