Ingrédients
- 200 gram rice noodles
- 1 cup shredded red cabbage
- 1 cup shredded carrots
- 1 large red bell pepper, thinly sliced
- 1/2 cup fresh cilantro, chopped
- 1/2 cup roasted peanuts, roughly chopped
- 2 tablespoons soy sauce
- 3 tablespoons peanut butter
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 2 teaspoons sesame oil
- 1 clove garlic, minced
- 1 teaspoon ginger, grated
- 1/2 teaspoon chili flakes
- 2 green green onions, sliced
- 1 lime, lime, cut into wedges
Instructions
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a large bowl, combine the cooked noodles, red cabbage, carrots, red bell pepper, cilantro, and peanuts.
- In a small bowl, whisk together soy sauce, peanut butter, honey, rice vinegar, sesame oil, garlic, ginger, and chili flakes until smooth.
- Pour the dressing over the noodle mixture and toss to combine evenly.
- Garnish with green onions and serve with lime wedges on the side.
