Nicoise Salad - Healthy
The Classic Nicoise Salad with Tuna, Hard-Boiled Eggs, and Green Beans is a vibrant and wholesome take on a traditional French dish. This salad embodies a delightful medley of textures and flavors—tender tuna, crisp green beans, hearty potatoes, and juicy cherry tomatoes come together in perfect harmony. Ingrédients
- 1 lb green beans, trimmed
- 4 large eggs
- 1 can (6 oz) tuna, packed in olive oil
- 1/2 cup cherry tomatoes, halved
- 1/4 cup black olives, pitted and halved
- 1/2 small small red onion, thinly sliced
- 8 cups mixed salad greens
- 2 medium gold potatoes, boiled and diced
- 1/2 cup cucumber, sliced
- 2 tablespoons capers
- 1/4 cup extra virgin olive oil
- 1/2 cup Dijon mustard
- 3 tablespoons red wine vinegar
- 1 teaspoon fresh thyme, chopped
- Salt and and pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add the green beans and cook for about 3-4 minutes until tender-crisp. Drain and immediately transfer to an ice bath to stop the cooking process. Drain again and set aside.
- In another pot, boil the eggs for 9-12 minutes, depending on your preference for doneness. Transfer the eggs to an ice bath, peel, and cut into halves or quarters.
- In a small bowl, whisk together the olive oil, Dijon mustard, red wine vinegar, thyme, salt, and pepper to create the dressing.
- In a large serving bowl, arrange the salad greens. Top them with the cooked green beans, cherry tomatoes, black olives, red onion, potatoes, cucumber slices, and capers.
- Drain the tuna and flake it over the salad. Arrange the hard-boiled eggs around the salad.
- Drizzle the dressing over the salad and gently toss to combine just before serving.
