Ingrédients
- 1 cup quinoa
- 2 cups water
- 1 large mango, diced
- 1 large avocado, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1/4 teaspoon ground cumin
- 1/4 teaspoon chili powder
Instructions
- Rinse the quinoa under cold water and drain.
- In a medium saucepan, bring 2 cups of water to a boil.
- Add quinoa to the boiling water, reduce heat to low, cover, and cook for 15 minutes or until the water is absorbed.
- Remove from heat and let the quinoa sit for 5 minutes, then fluff with a fork and let it cool.
- In a large mixing bowl, combine the diced mango, avocado, red bell pepper, red onion, and fresh cilantro.
- In a small bowl, whisk together the lime juice, olive oil, ground cumin, and chili powder.
- Add the cooked quinoa to the mixing bowl with the vegetables and mango, then pour the dressing over the salad.
- Gently toss all ingredients together until well combined and season with salt and black pepper to taste.
- Serve immediately or chill in the refrigerator for an hour for the flavors to meld.
