Ingrédients
- 1 cup Israeli couscous
- 2 cups water

- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped

- 1/4 cup lemon juice

- 1/4 cup extra virgin olive oil

Instructions
- In a medium saucepan, bring 2 cups of water to a boil. Add the Israeli couscous, 1 tablespoon olive oil, and 1/2 teaspoon salt. Reduce heat to a simmer, cover, and cook for about 10 minutes or until the couscous is tender and the water is absorbed. Let it cool.
- In a large mixing bowl, combine the cooked couscous, cherry tomatoes, cucumber, red onion, feta cheese, parsley, and mint.
- In a small bowl, whisk together the lemon juice, lemon zest, fresh dill, minced garlic, extra virgin olive oil, black pepper, and salt to taste.
