Grapefruit and Avocado Salad - Vegan

Ingrédients
- 2 large grapefruits
- 2 medium avocados
- 1/4 cup red onion, thinly sliced
- 2 tablespoons fresh mint leaves, chopped
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- Salt to to taste
- Black pepper pepper to taste
Instructions
- Start by peeling and segmenting the grapefruits, carefully removing any seeds.
- Slice the avocados in half, remove the pit, and carefully scoop out the flesh with a spoon. Slice the avocado into wedges.
- In a small bowl, whisk together the honey, olive oil, apple cider vinegar, Dijon mustard, salt, and black pepper to make the dressing.
- In a large salad bowl, combine the grapefruit segments, avocado slices, red onion, and fresh mint leaves.
