Ingrédients
- 1 cup quinoa, rinsed
- 2 cups water
- 1/2 cup red bell pepper, diced
- 1/2 cup yellow bell pepper, diced
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup parsley, chopped
- 1/4 cup dried cranberries
- 1/4 cup sunflower seeds
- 1/4 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon honey
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, and cover. Cook for 15 minutes or until the water is absorbed and quinoa is tender. Fluff with a fork and let cool.
- In a large bowl, combine the cooled quinoa, red bell pepper, yellow bell pepper, cucumber, red onion, parsley, dried cranberries, and sunflower seeds. Mix well.
- In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper to create the dressing.
- Pour the dressing over the salad and toss to coat evenly.
- Sprinkle the crumbled feta cheese on top and serve.
