- 4 cups shredded cabbage
- 2 cups shredded carrots
- 1 cup thinly sliced red bell pepper
- 1 cup thinly sliced cucumber
- 1/2 cup chopped fresh cilantro
- 1/4 cup chopped green onions
- 1/2 cup chopped peanuts
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon lime juice
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- 1 clove garlic, minced
- 2 tablespoons water (if needed for consistency)
Instructions
- In a large bowl, combine the shredded cabbage, shredded carrots, red bell pepper, cucumber, cilantro, and green onions.
- In a separate small bowl, whisk together the peanut butter, soy sauce, rice vinegar, lime juice, honey, sesame oil, grated ginger, and minced garlic until smooth. If the dressing is too thick, add water a little at a time until the desired consistency is achieved.
- Pour the dressing over the vegetable mixture and toss to combine thoroughly.
