Moroccan Couscous with Raisins - Vegetarian

Ingrédients
- 1 cup couscous
- 1 tablespoon olive oil
- 2 cups vegetable broth
- 1/2 cup raisins
- 1/4 cup sliced almonds
- 1 large carrot, diced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground turmeric
- Salt and and pepper to taste
- 1/4 cup fresh parsley, chopped
- Juice of of 1 lemon
Instructions
- In a large saucepan, heat the olive oil over medium heat.
- Add the onion and carrot, cooking until they soften and the onion is translucent, about 5 minutes.
- Stir in the garlic, cinnamon, cumin, and turmeric, cooking until fragrant, about 1 minute.
- Add the vegetable broth and bring to a boil.
- Stir in the couscous and raisins, then cover the saucepan and remove from heat.
- Let the couscous steam for 5 minutes, then fluff with a fork.
- Season with salt and pepper to taste.
- Stir in the lemon juice, sliced almonds, and fresh parsley before serving.
