Ingrédients
- 2 large duck breasts
- 1 cup pomegranate juice
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- 1 teaspoon fresh thyme, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pomegranate, pomegranate, seeded
Instructions
- Preheat the oven to 375°F (190°C).
- Score the skin of the duck breasts in a criss-cross pattern, being careful not to cut into the meat.
- Season the duck breasts with salt and pepper.
- Heat olive oil in a large oven-proof skillet over medium-high heat.
- Place the duck breasts skin-side down in the skillet and sear for about 6-8 minutes until the skin is crispy and browned.
- Flip the duck breasts and sear the other side for 2 minutes.
- Transfer the skillet to the preheated oven and roast for 8-10 minutes for medium-rare, or until desired doneness.
- While the duck is roasting, prepare the glaze by combining pomegranate juice, honey, balsamic vinegar, and fresh thyme in a small saucepan over medium heat. Simmer until the sauce is reduced by half and has thickened.
- Remove the duck breasts from the oven and let them rest for 5 minutes.
- Slice the duck breasts thinly and drizzle with the pomegranate glaze.
- Garnish with fresh pomegranate seeds before serving.
