Quinoa and Chickpea Veggie Patty - Vegan

Ingrédients
- 1 cup quinoa, cooked
- 1 cup chickpeas, mashed
- 1 small small carrot, grated
- 1/4 cup red onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup cilantro, chopped
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1/4 cup breadcrumbs
Instructions
- In a large bowl, combine the cooked quinoa, mashed chickpeas, grated carrot, red onion, garlic, and cilantro.
- Add the cumin, paprika, salt, and black pepper. Mix well.
- Stir in the breadcrumbs until the mixture comes together and is easy to form into patties.
- Shape the mixture into 8 small patties or 4 large patties.
- Heat the olive oil in a skillet over medium heat.
- Cook the patties for about 5 minutes on each side, until golden brown and heated through.
- Serve warm with your favorite salad or in a bun with your preferred toppings.
