Roasted Garlic and Caramelized Shallot Spread - Vegetarian
The Roasted Garlic and Caramelized Shallot Spread takes the humble garlic and shallot to gourmet heights. With the rich, melting sweetness of caramelized shallots and the mellow, aromatic flavor of roasted garlic folded into a creamy blend of sour cream and cream cheese, this spread is an elegant addition to any appetizer table.
Ingrédients
- 2 large heads of garlic
- 4 large shallots, thinly sliced
- 2 tablespoons olive oil
- 1/4 cup sour cream
- 1/4 cup cream cheese, softened
- 2 tablespoons fresh thyme leaves
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon balsamic vinegar
- 1 tablespoon chives, finely chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the tops off the garlic heads, drizzle with 1 tablespoon of olive oil, wrap in foil, and roast for 40 minutes or until the cloves are soft and golden.
- While the garlic is roasting, heat the remaining olive oil in a skillet over medium heat.
- Add the sliced shallots and cook, stirring occasionally, until they become golden brown and caramelized, about 15-20 minutes.
- Once the garlic is done, allow it to cool slightly, then squeeze the roasted cloves into a bowl.
- Add the caramelized shallots to the bowl along with the roasted garlic, sour cream, cream cheese, thyme leaves, salt, pepper, and balsamic vinegar.
- Mix until well combined and smooth. Adjust seasoning if necessary.
- Transfer the spread to a serving dish and garnish with finely chopped chives. Serve with toasted baguette slices or crackers.
