Charred Scallion and Miso Dip - Vegetarian

Ingrédients
- 1 bunch bunch scallions, trimmed
- 2 tablespoons miso paste
- 1/4 cup Greek yogurt
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/4 teaspoon black pepper
- 1/4 cup water
Instructions
- Heat a grill or grill pan over high heat.
- Grill the scallions until charred and softened, about 4-5 minutes. Allow to cool slightly.
- In a blender or food processor, combine the charred scallions, miso paste, Greek yogurt, lemon juice, garlic, soy sauce, sesame oil, black pepper, and water.
- Blend until smooth and creamy, scraping down the sides as necessary.
- Transfer the dip to a serving bowl and garnish with a drizzle of sesame oil and a sprinkle of black pepper if desired.
- Serve with fresh vegetables, pita chips, or crackers.
