Roasted Cauliflower Dip - Vegetarian

Ingrédients
- 1 medium cauliflower, cut into florets
- 2 tablespoons olive oil
- 4 cloves garlic, peeled
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground cumin
- 1/4 teaspoon paprika
- 1/2 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 teaspoon tahini
- 1/4 teaspoon smoked paprika (for garnish)
- Fresh parsley, parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the cauliflower florets and garlic cloves with the olive oil, salt, black pepper, cumin, and paprika.
- Spread the cauliflower and garlic on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and lightly browned, stirring halfway through the cooking time.
- Allow the roasted cauliflower and garlic to cool slightly.
- In a food processor, combine the roasted cauliflower and garlic, Greek yogurt, lemon juice, and tahini. Blend until smooth and creamy.
- Transfer the dip to a serving bowl and smooth the top with the back of a spoon.
- Garnish with smoked paprika and fresh parsley.
- Serve with pita chips, fresh vegetables, or as a spread on sandwiches.
