Ingrédients
- 1 cup cashews
- 1 cup coconut milk
- 1 tablespoon olive oil
- 2 teaspoons curry powder
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 tablespoon lime juice
- 1 tablespoon fresh cilantro, chopped
Instructions
- Soak the cashews in water for at least 4 hours or overnight.
- Drain the cashews and place them in a blender.
- Add coconut milk, olive oil, curry powder, minced garlic, salt, and black pepper to the blender.
- Blend until smooth and creamy, adding more coconut milk if needed to reach desired consistency.
